Gosh, I made this yesterday because, sometimes you know, you just want some paleo cake. It was yummy and very light! Dead easy and quick to make, too. I had it with raspberries and some drizzled heavy cream. Please share! Buttons are to the left and at the end of the post.


- 6 eggs
- 2 tablespoons raw honey
- 1 cup ground almonds
- 1 teaspoon almond extract
- 1 teaspoon baking soda
- Fresh berries
- 1. Preheat oven to 350˚F.
- 2. Beat the eggs on low with a hand or stand mixer. (A blender will also work.)
- 3. Add the ground almonds, honey, almond extract, and baking soda and continue to mix.
- 4. Bake in a 9½-inch round baking pan for 50 minutes to 1 hour. Check the cake after 45 minutes, the top of the cake should be golden brown and the middle slightly moist.
- 5. Once cooked, let the cake cool before serving.
