Paleo Recipes: Coconut Butter Dates

Some foods are titillating, others comfort the soul. A very rare few do both. In my book, coconut butter ranks right up there in that department.  Taken from Louise Hendon’s new e-book, 30-Minute Paleo Dessert Recipes: Simple Gluten-Free and Paleo Desserts for Improved Weight-Loss, this super simple recipe is so much more sophisticated than just eating it off the spoon. Plus it takes just a few minutes to prepare.
 
Exotic, memorable, and brain dead easy. What’s not to like?  (Just be sure you use coconut butter and not coconut oil!) Please share! Buttons are to the left and at the end of the post.

Coconut Butter Dates

I love 2-ingredient recipes – it makes the dessert special (i.e. it’s not just a piece of fruit), but at the same time, it’s super easy and quick to make. That’s the fantastic thing about this recipe – it looks like you put in effort to make dessert, but it actually took all of 5 minutes!

Ingredients
  1. 10 pitted dates
  2. 1 cup coconut butter
Instructions
  1. 1. Melt the coconut butter slightly in the microwave if it's not soft enough to scoop out with a spoon (make sure to take the metal lid off the jar first before microwaving).
  2. 2. Slice open each date so that it opens out but isn't sliced in half.
  3. 3. Stuff each date with as much coconut butter as you can fit in while still being able to close it up.
