  • 2 eggs
  • 1 tsp baking soda
  • 1/2 cup coconut flour
  • 2 cups of almond flour
  • Pinch of sea salt
  • 1/2 cup melted coconut oil
  • 2 ripe/over ripe bananas
  • 3/4 cup crushed walnuts (optional)


Preheat your oven to 350 degrees. Grease and flour your loaf tin.

Sift the almond flour, baking soda and sea salt in a mixing bowl.

In another mixing bowl, pour melted coconut oil. In third bowl or mug, beat the eggs. Add eggs to coconut oil. Mix.

Mash up the bananas and add them to the eggs and coconut oil. Mix. Add walnuts if you’re using them.

Add wet ingredients to the dry ingredients and stir until well mixed together. Pour into loaf tin and bake for 30 minutes or until your toothpick comes out clean.

Primal alternative: Use butter instead of coconut oil.

Hack: Don’t peek before your 30 minutes is up! If you take it out and put it back in, it will flatten. I make the recipe as is and everyone chows it down but depending on the level of your sweet tooth, you could add honey.
